Poached Pears
This is a compilation of about 10 recipes I found both online and in books.
As a first time fruit poacher, I went searching for the best recipe, and in my opinion this was it.
The first batch was slightly too sweet for my liking and didn’t have enough kick so I’ve amended the recipe to reflect that.

serves 8 (recipe was doubled in photos)
- 4 bo bosc pears, peeled, halved and cored
- 1 vanilla bean
- 6 star anise
- 1 cinnamon quill
- 3 cloves
- 2 tbsp whole black peppercorns
- 1 cup brown sugar
- 4-5 cups water
- baking paper

place all spices in a pot, cover with water, add brown sugar and begin to simmer so sugar dissolves.
peel, halve and core pears while poaching liquid is boiling.
place pears in pot with liquid and cover with a piece of baking paper, leaving a whole int he middle for steam to escape.
Leave the pears on simmer for 30-40 mins or until pears are soft.
Remove pears from liquid and set aside.
Reduce remaining liquid until it becomes as thicker and more of a syrup.
Drizzle pears with syrup and serve with icecream.
